do you use them like roman numerals....use the 10 and the 5 one to make 15...

Sort of, it's like 10+5=15...so....Jyuu+go=Jyuugo(15)...and for 20 it's 2+10=20 (Ni+Jyuu=Ni-Jyuu(20)) or like 31 is 3+10+1=31(San+Jyuu+Ichi=San-Jyuu-Ichi) lol

I've seen two different ways of writting "rei", is there two? I've got a Japanese tranlastion book so that's where I found the one version of the symbol, but I can't find it written anywhere else in that same way. Help please? ^^;

Well, for zero, you can either use "rei" or "zero". Most people in Japan just use "zero". ^_^

Oh, and ages are different. For example, to say "I'm 20 years old." you would say "Watashi wa hatachi sai desu." (sai is the counter for age) For age, use hatachi instead of ni-juu. But ni-juu-ni sai still means 22 years old. A lot of the ages have a their own word.
